I have a Runco DTV-947 and I am wondering if I can find a VFD-4404 processor instead of the VFD-4402 that it comes with - the 4404 apparently will deliver resolutions up and including 1080p. Would this work?

No, none of that series of projectors will do 1080p, the internal scan rate is capped at either 1080i or 720p. Forget the RUnco scalers, get an external Moome box and run HDMI via 1080i to the projector. That will give a great image.
