What encoder do they use? Or is it a straight digital signal converted only to composite and s-video?

No encoder. The entire analog NTSC signal is pressed into the disc. No encoding, no digital, just a straight analog optical NTSC signal on the disc being read and converted 1:1 into an electrical equivalent. Just wounderful! I have over 100 of them.
